Cauliflower & Chickpea Tacos

INGREDIENTS:

For the Cauliflower

  • 1 organic cauliflower
  • 1 tablespoon avocado oil
  • 1 teaspoon ground cumin
  • 1 tablespoon paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon sea salt

For the Chickpeas:

  • 1x 400g organic chickpeas
  • 1 tablespoon avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 1 teaspoon black mustard seeds

DIRECTIONS:

  1. Preheat oven to 425 degrees F
  2. Place chickpeas in a baking tray with coconut oil (or avocado oil) and spices & mix well
  3. In a separate baking tray, toss the cauliflower in the spices and coconut oil (or avocado oil)
  4. Place both trays in oven. Remove chickpeas after 25-30 minutes (or until crispy). Remove cauliflower after 35-40 minutes

TO SERVE:

On a coconut wrap add vegan mayo or a vegan ranch dressing, lettuce, cauliflower, chickpeas and drizzle with hot sauce.
