Hoisin Plant-Based ‘Duck’ Pancakes

Hoisin Plant-Based ‘Duck’ Pancakes

INGREDIENTS:

  • 600g King Oyster mushrooms
  • 2 tbsp spicy everything seasoning (Flavor God)
  • 1 tbsp coconut oil
  • 1 pinch of salt
  • Nuco organic coconut wraps
  • Hoisin sauce
  • spring onions
  • 1 cucumber
  • sesame seeds
  • coriander

DIRECTIONS:

  1. Preheat oven to 350 degrees F.
  2. Shred stems of mushrooms with hands into thick pieces and slice
    mushroom caps. Place in a medium-sized mixing bowl.
  3. Add the spicy everything seasoning, coconut oil and salt to the
    bowl and stir to combine ingredients.
  4. Line a baking sheet with parchment paper and add the
    mushrooms to the pan in a single layer.
  5. Roast for 30 minutes and remove from oven.
  6. Drizzle 1 tbsp of Hoisin sauce across the middle of a Nuco
    coconut wrap and smear with back of spoon.
  7. Add the mushroom ‘duck’ on top of the coconut wrap and top
    with spring onions and cucumber spears.
  8. Sprinkle sesame seeds and coriander on top, wrap it up and
    enjoy!
