Oven Baked French Onion Chicken

Ingredients:

  • 2-4 chicken breasts (skinless and boneless)
  • 2-3 onions (sliced)
  • 3-4 garlic cloves (minced)
  • 1 tbsp fresh thyme (minced)
  • 1 ½ cup beef stock (NO sugar added)
  • 1 tsp dried onion
  • 1 tsp dried oregano
  • ½ tsp paprika (optional)
  • Himalayan sea salt and freshly ground black pepper

Directions:

  1. Preheat oven to 400 F.
  2. In a bowl combine the dried onion, dried oregano, paprika, and generously season to taste.
  3. Rub the chicken with the onion-oregano mixture, making sure they are well coated.
  4. Heat a skillet over medium-high heat and brown the chicken 2-3 minutes per side or until nicely browned.
  5. Set the chicken aside.
  6. Add the fresh onion and garlic, cook over medium heat, stirring until soft.
  7. Add 2 tsp of the stock to the skillet along with the thyme and rosemary; cook until a bit caramelized, 5-6 minutes.
  8. Bring the chicken back to the pan, toss everything, pour in the remaining stock, and place in the oven.
  9. Bake until chicken is cooked through, about 15-18 minutes. Adjust seasoning and serve!
