Vegetable Sushi

Ingredients:

  • Napa cabbage (boiled)
  • Carrots (sliced into strips)
  • Kirby pickle (sliced into strips)
  • Rice wine vinegar
  • Sesame oil
  • Sesame seeds
  • Lemon juice
  • Salt
  • Portobello mushrooms
  • Pepper
  • Turmeric
  • Avocado Oil

Directions:

  1. Add sliced carrots and Kirby pickle to a container and “pickle” by adding
    rice wine vinegar, sesame oil, sesame seeds, lemon juice and salt.
  2. Slice up some Portobello mushrooms and add to a bowl with salt, pepper,
    paprika, turmeric and avocado oil.
  3. Sautee mushrooms in a pan until cooked through.
  4. Lay out a piece of boiled cabbage and add the mushrooms and pickled vegetables and roll up in the cabbage.
  5. Roast in a pan for a few seconds on each side.
  6. Slice up, top with sesame seeds and enjoy!!
