Pumpkin “Pie”

INGREDIENTS:

Crust:

  • 1/4 cup finely ground almonds
  • 1 teaspoon grape seed oil

Filling:

  • 1 (15 oz) can pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 3/4 cup organic pure powdered stevia for baking
  • 3 eggs
  • 1 cup unsweetened almond milk

DIRECTIONS:

  1. Lightly grease an 8”x8” baking pan with grape seed oil
  2. Distribute the ground almonds evenly on the bottom and slightly up the sides of the baking pan
  3. In a mixing bowl, whisk together the puree, pumpkin pie spice and stevia (adjusting spices and stevia to taste)
  4. Whisk in eggs and almond milk
  5. Pour over almonds in baking dish
  6. Bake at 350 degrees until knife inserted in center comes out clean, about 45-50 minutes
  7. Chill and serve!!

This recipe makes 6 servings. This equates to having 1 serving of vegetable, 1 ounce of protein and 1 essential fatty acid!!
