Raw Cheesecake

INGREDIENTS:

  • 1.5 cups raw cashews
  • 1.5 cups raw almonds
  • 1 cup medjool dates
  • 1/2 teaspoon kosher salt
  • 1/2 cup coconut milk
  • 1/4 cup organic maple syrup
  • 1 tablespoon coconut oil
  • 2 tablespoons vanilla extract
  • 2 tablespoons lemon juice
  • Fresh berries (optional)
  • Coconut flakes (optional)

DIRECTIONS:

  1. Soak raw cashews in water for 6 hours or overnight
  2. In a food processor, combine almonds, dates and salt
  3. Add mixture to pie pan and hand mold mixture into a crust (about ½ inch thick). Place in freezer.
  4. Drain raw cashews and add to food processor. Add coconut milk, maple syrup, coconut oil, vanilla extract and lemon juice. Blend until smooth.
  5. Fill crust with cashew mixture and top with fresh berries and coconut flakes (optional)
  6. Refrigerate 1 hour before serving and enjoy!
